I feel like I was literally the last one to get on the “overnight oats” train. I’ve never been much of a breakfast person but was easily figuring out 1/2 a cup of granola and a banana wasn’t getting me through the first 3 hours of my busy work day. Since I have a full-time relationship with pinterest, I started looking at healthy meal prep options for breakfast. There are so many things I’d love to eat; ie., avocado toast, eggs, smoothies, etc but i rarely give myself enough time to sit down let alone eat a healthy balanced breakfast before walking out the door. Frozen sandwiches were the closet I got to balanced and fast, but at $10 a box per week, it was more than a little out of my price range.
Then I started finding these recipes for overnight oats. Like oatmeal, but meal prepped, and you can eat them out of mason jars (my obsession with mason jars is out of hand). Long story short, I printed out like twenty different recipes. All had the same base ingredients: rolled oats, chia seeds, pure maple syrup, greek yogurt, and some sort of milk (I do coconut, but almond or soy does just as well)!
The reason I loved this particular recipe from Flavor the Moment (click the link to see original recipe) was because it could be pre made for 4 days! It takes me about 10 minutes on a Sunday afternoon to make my breakfast for the next five days, pop the jars in the fridge and grab one before leaving for work.
Easy to eat on the go, easy to clean, easy, easy, easy!
Recipe (1 serving version)
In a pint size mason jar, add;
- 1/2 cup rolled oats
- 1/2 tablespoon chia seeds
- 2/3 cup coconut milk (or any milk really)
- 1 tablespoon pure maple syrup
Place lid on mason jar and put in fridge for at least three hours or overnight.
The morning of, add;
- 1/4 cup plain greek yogurt (or just a spoonful depending on how yogurty you like things)
- 1/3 cup unsweetened shredded coconut (the original calls for sweetened, but I like the taste of the unsweetened and its healthier!)
There you have it! You can also quadruple the recipe and make a big batch, but since it’s just me, I make the jars individually and place in the fridge. Even if I prep 5 on Sunday, the one I eat Friday morning at work, tastes just as good as the one I ate Monday morning!
